I somehow feel like kale is the ultimate body-healer. Sick? Have some kale. Tired? Have some kale. Maybe the media has confused me just a little bit?
On the real, though – kale is super great for your body. “Superfood” if you will. But why?
Bone building: High in calcium, magnesium and vitamin K which help to strengthen bones.
High in antioxidants and anti-inflammatory: kale is a great source of Kaempferol & Quercetin (both antioxidants) that have anti-inflammatory properties.
Hormone balancing: Kale contains Indoles – these natural suckers boost DNA repair and can protect against the spread of estrogen-dependent cancers such as breast cancer.
So… maybe the media hasn’t tricked me after all. Kale is super. And so are you!
Grapefruit & Avocado Kale Salad – Seves 2 -3
4 cups shredded/chopped curly kale
1/4 cup parsley, roughly chopped
1 grapefruit, segmented and chopped
1 avocado, chopped
1/2 cup chopped cucumber
2 tbsp sunflower seeds
2 tbsp hemp seeds
1 tbsp dijon mustard
1 tbsp maple syrup
1 tbsp olive oil
1 clove garlic, finely chopped/grated
1. Combine all dressing ingredients in a mason jar and shake. Set aside.
2. In a large bowl, gently massage kale until the fibres have broken down slightly. Add the parsley, grapefruit, avocado, cucumber, sunflower seeds, and hemp seeds.
3. Toss with dressing, divide into bowls and eat it all up.
